Parsley Juice

We know, you thought you needed a fancy juicer to make weird juices, like Parsley Juice, but all you really need is a blender and a coffee filter. And while Parsley Juice does sound pretty strange, it has a fresh herbaceous (duh) flavor that pairs particularly well with gin and vodka. It also makes a refreshing beverage for a hot day when mixed with chilled club soda and lightly sweetened with lavender honey. Most importantly, since parsley tends to grow like crazy, it’s just a good way to use it up.

1 cup clean parsley, chopped roughly — you can use stems and leaves

1/2 cup cucumber chunks, with peel

3/4 cup water

juice of one lime

pinch of salt

Put all ingredients into a blender and blend on high until liquified. Strain through a coffee filter to get a clear bright green liquid. Can be refrigerated for up to one week.
