Don’t be surprised by the color of this simple syrup — it will be dark green. However, when you mix it with a liquid, it will become a delicate shade of violet, with a subtle woodsy essence. Try mixing it with a sparkling white wine or in our cocktail La Violette.
1/2 cup clean violet petals
3/4 cup water
1/3 cup granulated sugar
Put all ingredients in a small saucepan over medium heat and bring to a low boil, stirring constantly. Reduce heat to low and allow to simmer very gently, stirring occasionally, until thickened, about 15 minutes. Allow to cool and remove petals. Can be refrigerated for up to two weeks.
